Always pour water over loose teas before the 1st infusion, because…

Surely you have not seen with your own eyes how your tea dries and doesn’t smell

In China, it’s not uncommon to dry outside on a concrete yard in front of the house (if there’s canvas/mesh under the leaves, it’s a higher level of cleanliness), or maybe just right on the road. When they stink properly (thankfully cars don’t drive over them) they get swept up with a broom into a wicker basket and go on to be processed.

So Chinese teas (Japanese teas don’t come into contact with the outdoor drying area much) pour, pour and pour!
